Ingredients in this air fryer tomato recipe
Five storecupboard ingredients and hardly any washing up! It’s a winner. I’ve used dried oregano here but you could try different herbs. Fresh basil or dried rosemary would also work really well. You could even add roasted peppers and crumbled feta for a more substantial lunch.

- Baby plum tomatoes - or whatever kind of tomatoes you have to hand
- Drizzle olive oil - or your preferred air fryer oil
- Salt and pepper
- Dried oregano - or your choice of herbs
- Balsamic vinegar
Once the tomatoes are cooked, simply pile on a slice of toasted sourdough, or any other bread and enjoy!

How to make air fryer roasted tomatoes
In my recipe for air fryer tomatoes on sourdough, I used cherry tomatoes. But you can use whatever kind of tomatoes you have to hand. There are lots of healthy air fryer recipes that use fresh tomatoes so why not experiment with different recipes and combinations.
Air frying tomatoes concentrates their flavour, making them a tasty and healthy addition to many different dishes. To do this, simply toss tomato halves or slices with a bit of olive oil, salt, and pepper, then air fry them for around 5-10 minutes at 375°F (190°C) until they're softened and slightly caramelized. Air fried tomatoes work well in salads, on pizzas, or in pasta dishes. However, I find it's best to avoid air frying whole tomatoes, as they may burst due to the heat and pressure buildup. Instead, I always cut them into halves - or into quarters if they are lager tomatoes.

How to choose the best tomatoes
Look for tomatoes that are firm yet slightly yielding to gentle pressure, with a vibrant colour and a smooth, unblemished skin. Opt for vine-ripened or heirloom varieties for richer flavour. Consider the purpose: Roma tomatoes are ideal for sauces, while beefsteak tomatoes shine in sandwiches. Trust your nose – the best tomatoes emit a sweet, earthy aroma. Finally, buy locally when possible, as tomatoes ripened on the vine and picked at their peak are more likely to deliver that delicious, garden-fresh taste that elevates your salads, sauces, and dishes to the next level.
How to season tomatoes
Seasoning tomatoes enhances their natural sweetness and elevates their flavour. Start with a pinch of salt, which not only intensifies taste but also draws out moisture, concentrating the tomato's essence. Freshly ground black pepper adds a subtle kick, balancing the sweetness with a hint of spice. For a burst of freshness, sprinkle on some finely chopped basil or parsley (cilantro). A drizzle of olive oil imparts richness and a silky texture while a dash of balsamic vinegar or lemon juice can provide a tangy contrast.

Nutrition
Yes, you can put tomatoes in an air fryer, but it's essential to approach it with a specific purpose in mind. Small tomatoes roast in the air fryer in next to no time so remember to check them regularly during the cooking process.
Tomatoes offer a range of health benefits. They are rich in antioxidants like lycopene, known for its cancer-fighting properties. Lycopene may also support heart health by reducing "bad" LDL cholesterol. Tomatoes are a fantastic source of vitamins, particularly vitamin C and potassium, supporting immune function and blood pressure regulation. Their high fibre content aids digestion and weight management. Additionally, tomatoes contain folate, promoting cell repair and growth. Eating tomatoes has been associated with reduced risk of chronic diseases like diabetes and cardiovascular issues.
Sourdough bread has a distinctive taste and texture and is considered a healthier alternative to many overly-processed bread products. It's made through a natural fermentation process, where wild yeast and lactic acid bacteria interact with flour and water over several days. This process not only gives the bread its distinct tangy flavour but also makes it easier to digest. Sourdough has a lower glycaemic index compared to regular bread, which can help stabilize blood sugar levels. It's also more nutritious, offering essential minerals and vitamins. Beyond its health benefits, sourdough's chewy crust and airy crumb make it a great choice for sandwiches and toast.
