My daughter loves helping me make these air fryer banana and choc chip muffins. Which is good news as I make a batch on an almost weekly basis. They are full of healthy oaty goodness making them a perfect after school snack, mid-afternoon treat or an indulgent breakfast idea. They are so easy to make and use storecupboard ingredients. Just make sure your bananas are super-ripe before you start.
I cook these banana muffins in the air fryer in individual silicone muffin cases but you could use the mixture to make an air fryer banana bread instead, using a silicon loaf case. Either way, they are so delicious, you'll definitely want to make them again and again!
Ingredients for air fryer banana muffins
Bananas - make sure they are super ripe
Oats - use traditional rolled oats, not instant oats
Butter - the butter gives flavour and structure to your muffins
Egg - this helps bind everything together
Flour - this recipe uses plain flour
Bicarbinate of soda - helps create a fluffy textured muffin
Baking powder - this raising agent will give the distinctive rise to your muffins
Pinch of salt - brings out the flavour of the banana and chocolate
Chocolate chips - I use dark choc chips but feel free to use milk chocolate.
How to cook muffins in an air fryer
Cooking muffins in an air fryer isn't so different to cooking them in a traditional oven - they just take less time. I like to use silicon muffin cases as they are easy to place in and take out of the air fryer. I find that I can fit six muffins in each drawer of my Ninja Dual air fryer so can make 12 at a time using both drawers.
You can follow my recipe for banana muffins or try out a different muffin recipe using your air fryer. If you haven't made cakes or sweet treats in an air fryer, muffins is a great place to start because they are pretty foolproof. Once cooked, the muffins store well in an airtight container for around three days.
These muffins make a great air fryer breakfast idea served alongside a little fruit salad. I also love them as a mid-afternoon snack with a cuppa.
Hint: I like to test that the muffins are baked by inserting a skewer - if it comes out clean, the muffins are ready (don't worry if there's a little banana stuck to the skewer - as long as it's not wet mixture, you're all good).
Substitutions
Feel free to swap the chocolate chips in this banana muffin recipe for chopped walnuts or raisins. You could even use fresh blueberries but in that case, you'll need to eat the muffins within a day or so (but that's a pretty easy thing to do!).
Easy Banana Muffins with Chocolate Chips
Equipment
Ingredients
- 2 large very ripe bananas
- 100 g oats
- 200 g plain flour
- 100 g light brown sugar
- 1.5 teaspoon baking powder
- 1 teaspoon bicarbonate of soda (sometimes called baking soda)
- 100 g chocolate chips
- pinch salt
- 1 egg (beaten)
- 60 butter (melted)
Instructions
- Peel and roughly chop your ripe bananas then place in a bowl and mash well with a fork. Add the melted butter and beaten egg. Set aside while you prepare the dry ingredients (see next step).
- In a large bowl combine the oats, plain flour, baking powder, sugar, bicarbonate of soda, salt and chocolate chips.
- Make a well in the centre of the dry ingredients and add the banana, butter and egg mixture. Fold the wet ingredients in until everything is just combined (it's important not to overmix).
- Spoon the mixture into your silicon muffin molds and place into your air fryer basket. Cook on the bake setting (or air fry setting) at 160℃ (320℉) for 10-15 minutes. The muffins are ready when the tops are golden and a skewer insterted into the middle of a muffin comes out clean.
