These air fryer banana muffins are so versatile - eat them for breakfast or as a snack. They're so easy to make and are a great recipe for the kids to get involved with too!
1teaspoonbicarbonate of soda(sometimes called baking soda)
100gchocolate chips
pinchsalt
1egg(beaten)
60gbutter(melted)
Instructions
Peel and roughly chop your ripe bananas then place in a bowl and mash well with a fork. Add the melted butter and beaten egg. Set aside while you prepare the dry ingredients (see next step).
In a large bowl combine the oats, plain flour, baking powder, sugar, bicarbonate of soda, salt and chocolate chips.
Make a well in the centre of the dry ingredients and add the banana, butter and egg mixture. Fold the wet ingredients in until everything is just combined (it's important not to overmix).
Spoon the mixture into your silicon muffin molds and place into your air fryer basket. Cook on the bake setting (or air fry setting) at 160℃ (320℉) for 10-15 minutes. The muffins are ready when the tops are golden and a skewer insterted into the middle of a muffin comes out clean.
