Instructions
Start by washing your squash. If you’re using summer squash like zucchini or yellow squash, simply trim the ends and slice them into rounds or half-moons about ¼-inch thick. For winter squash like butternut or acorn, peel the squash, remove the seeds, and cut it into evenly sized cubes, about 1-inch thick.
Place the squash pieces in a bowl and toss with the oil, herbs, salt and pepper.
Preheat your air fryer to 400°F (200°C). Preheating ensures that the squash starts cooking immediately, helping to develop a nice caramelization on the outside.
Arrange the squash in a single layer in the air fryer basket. Be careful not to overcrowd the basket. Cook the squash for 10-15 minutes, shaking the basket halfway through to ensure all sides are evenly browned. The exact cooking time will depend on the thickness of your squash pieces and your preferred level of doneness.
Once the squash is golden brown and tender, carefully remove it from the air fryer. Serve it hot as a side dish, or incorporate it into salads, grain bowls, or pasta dishes.
