Aubergine is one of my all-time favourite ingredients. It’s so adaptable, and air-fried aubergines can be used in various dishes. This method will give you perfectly cooked chunks of silky aubergine to add to curries, stews and pasta bakes.
1teaspoonDried seasoning(salt, pepper, garlic powder, chilli flakes, oregano, rosemary and cumin all work well)
Instructions
Wash and dry the aubergine then trim off the ends.
Cut the aubergine in half then cut each half into 1cm thick slices.
Turn the slices around and cut each slice into chunks (the chunks will shrink slightly during the cooking process so it's best to keep them fairly large).
Place the aubergine chunks in your air fryer basket in a single layer.
Drizzle over the olive oil and sprinkle the seasoning onto the aubergine chunks. Give everything a shake to make sure it's coated evenly.
Cook on the air fryer setting for 10 minutes at 375°F (190°C), shaking a couple of times as it cooks. After 10 minutes, test a piece of aubergine (a knife should slip through the flesh easily, or you can taste a piece to make sure it’s cooked to your liking). If the aubergine needs a little longer, pop it back in for another minute.
